🍽️ Ingredients List

  • Natural-casing raw sausage links 🌭 (3 pounds / 1.35 kg), such as bratwurst or Italian

  • Beer 🍺 (6 ounces / 170 ml), optional

  • Kosher salt 🧂 (optional)

  • Butter or oil 🧈 (1 tablespoon / 15 ml), if finishing on the stovetop

  • Buns and condiments 🥖, for serving


🍳 Steps

  1. Set the Temperature: Set your precision cooker to the desired temperature, between 140 and 160°F (60 and 71°C).

  2. Vacuum Seal: Place sausages inside Fresko vacuum-sealer bags in a single layer. Optionally, add a few tablespoons of beer and 2 teaspoons of salt to each bag. Sealing Tip: For delicate foods like sausages, use the ‘Pulse’ mode on your Fresko Vacuum Sealer. This gives you full control over the vacuum pressure. Use short pulses to remove the air until the bag is snug but the sausages are not squeezed, then seal. This is the perfect way to prevent crushing the sausages or sucking out liquids.

  3. Sous Vide: Add the sealed sausages to the water bath and cook for at least 45 minutes and up to 4 hours. This flexible cooking time means you don't have to watch them closely.

  4. Dry the Sausages: Remove sausages from the bags and discard the juices. Dry the sausages carefully on a paper towel–lined plate. This step is crucial for getting a good sear. 

  5. Finish (Choose One):

    • On the Stovetop: Heat 1 tablespoon of oil or butter in a skillet over medium heat until shimmering. Add the sausages and cook, turning occasionally, until well browned on all sides, about 3 minutes.

    • On the Grill: Grill the sausages over medium heat, turning occasionally, until well browned on all sides, about 3 minutes. 

  6. Serve: Serve immediately with buns and your favorite condiments. Enjoy the juicy perfection!
