  • Extra-virgin olive oil : 1/4 cup (60 ml), plus more for serving

  • Garlic 🧄: 1 clove

  • Small onion 🧅: 1/2, roughly chopped (2.5 ounces; 75 g)

  • Dried oregano 🌱: 1/2 teaspoon

  • Red pepper flakes 🌶️: 1/2 teaspoon

  • White bread 🍞: 1 slice, crusts removed, torn into rough 1/2-inch pieces (about 1 ounce; 30 g)

  • Canned peeled whole tomatoes 🍅: 1 (28-ounce) can, packed in juice (about 800 g)

  • Water or stock 💧: 1 cup (235 ml)

  • Kosher salt and freshly ground black pepper 🧂

  • Garnish: Minced chives, basil, or parsley


🍳 Steps

  1. Combine Ingredients: Combine the olive oil, garlic, onion, oregano, red pepper flakes, bread, tomatoes and their juices, and water or stock in the jar of your Fresko high-powered blender

  2. Start Blending: Turn the blender on to low speed and slowly increase the speed to its maximum setting.

  3. Blend Until Hot: Blend until the soup is steaming hot and completely smooth, which should take about 4 minutes. The heat is generated purely by the friction of the blades. 

  4. Season: Season to taste with salt and pepper. If you desire an even smoother soup, you can press it through a fine-mesh strainer before serving.

  5. Serve: Serve immediately, garnished with fresh herbs and a drizzle of olive oil. Alternatively, you can chill the soup and serve it cold. (Once chilled, you can adjust the texture by whisking in water, a tablespoon at a time, until your desired consistency is reached.)
